Description

This Cottage Cheese and Spinach Crustless Quiche is light, fluffy, and packed with protein. A healthy, gluten-free breakfast perfect for busy mornings.


Ingredients

1 cup cottage cheese (well-drained)

6 large eggs

1 cup fresh spinach, chopped

¼ cup shredded cheddar cheese (optional)

2 tbsp heavy cream (optional)

2 green onions, chopped

1 tsp dried dill

½ tsp garlic powder

Salt and pepper to taste


Instructions

1. Preheat oven to 375°F (190°C) and grease a 9-inch pie dish.

2. Chop spinach and green onions.

3. In a bowl, whisk eggs, cottage cheese, cream, cheese, dill, garlic powder, salt, and pepper.

4. Fold in spinach and green onions.

5. Pour mixture into dish and bake for 35-40 minutes until set.

6. Cool for 5-10 minutes before slicing and serving.

Notes

Drain cottage cheese well to avoid excess moisture.

Use fresh or well-drained frozen spinach.

Store leftovers in the fridge for up to 4 days or freeze for 2 months.
